The isolation, purification and characterization of new proteolytic enzymes bear considerable importance in the pharmaceutical and biochemical fields. A proteolytic enzyme has been isolated from the stem latex of Jackfruit (Artocarpus heterophyllus Lam.). During the work, emphasis has been given on physical-chemical characterization, kinetic and thermodynamic study including its possible clinical application.
