Digestive enzymes are vital for digestion and absorption of nutrients through breakdown of macromolecules such as proteins, carbohydrates and fats. Most of these digestive enzymes are hydrolases. They are secreted by various parts of the gastro intestinal tract (GI tract) as shown in Table1. Almost these macromolecules are digested through hydrolysis reactions of the enzymes within optimal pH of 6.5-7.5 except pepsin. Pepsin's optimal pH range lies between 1-2.5 (Karasov and Douglas, 2013).
